Spinach
Squares

Serves: Makes 2 doz |

Ingredients: |

1 cup
all-purpose flour
-
1 tsp. salt
-
1 tsp. baking
powder
-
2 eggs,
beaten
-
1 cup milk
-
1/4 c melted
margarine
-
1/2 cup
finely chopped onion
-
2 cups
shredded cheddar cheese
-
1 (10 oz)
package frozen chopped spinach, thawed and drained.

Preparation: |
|
In large bowl combine flour, salt and baking powder. Stir
in beaten eggs, milk and butter. Add remaining
ingredients and stir until moistened. Pour into lightly
greased 9"x13" pan. Bake 350 degrees for 35 minutes. Cool
and cut into 1" squares. |

Cookies

Ingredients: |
-
2c Sugar
-
1/2c
Margarine or butter (1 stick)
-
1/2c Milk
(whole)
-
3c Oatmeal
(quick oats)
-
1c Coconut
-
4 tbsp Cocoa
-
1c Peanut
Butter (generic brand)
-
1/2c Walnuts
-
1 tsp Vanilla

Preparation: |
|
Mix together dry ingredients in a large bowl. Set aside.
Mix well. In a 2qt pan, stir together wet ingredients,
over medium heat. Stir constantly until mixture reaches a
rolling boil. Remove from heat and pour over dry
ingredients. Mix Well. Roll into balls or shape them as
you wish, and drop them onto wax paper on a cookie sheet.
Put in a fridge for about 15-20 minutes. Eat and enjoy. |

Do not double this recipe as it will not work. Very
simple to make, takes about 15 minutes. WARNING: These
cookies are addicting, make sure you have enough
ingredients for 2 batches...you'll need it. |

Chewy Granola Bars

Ingredients: |

1/2 c.
butter, softened
-
1 c. packed
brown sugar
-
1/4 c.
granulated sugar
-
1/2 c. creamy
peanut butter
-
2 T. honey
-
1/2 t.
vanilla
-
1 egg
-
1 c. self
rising flour
-
1 t.
cinnamon
-
1/4 t. salt
-
1 1/2 c.
quick cooking oats
-
1 3/4 c/ rice
crispies cereal
-
3/4 c. mini
chocolate chips

Preparation: |
Cream butter and sugars. Add honey, vanilla, peanut
butter, & egg, mix well. Combine dry ingredients & add to
creamed mixture. Stir in oats, cereal, and chocolate
chips. Press into a 13x9x2" greased pan. Bake at 350 for
25-30 minutes.

I find that if I spray my hands with non stick spray,
when I press these into the pan they won't stick to my
hands. My kids love these, they are never around for more
than a day and they are begging for more! |

Nacho dip

Velveeta

1 lb. hot
sausage (or hamburger)

1 Jar Salsa

Tortilla
chips

Preparation: |
|
Brown meat in skillet, drain. Cut Velveeta into cubes.
Put in a crock pot on low and melt. Combine meat, cheese,
and salsa in crock pot until thoroughly heated. Serve in
bowls as a dip for tortilla chips. |

Lots & Lots
of ice

Preparation: |

Make sure ya
have a cleaned out cooler or large container.

Add all the
alcohol into cooler Add all the rest of the mixes into
the cooler
-
Clean up and
slice all the fruit into bit size pieces and add into
the cooler (Do not add the watermelon or cantelope
rinds)
-
Add ice and
chill
-
Drink with
all your friends while cheering on your favorite
driver! This is a great Infield drink! Ya can stay in
your campsite and pass out shots of fruit to your
friends!!!! ! Please do not Drink & Drive.
